COCONUT RICE

COCONUT RICE
This is a healthy meal based on the content of the ingredients. It is free of vegetable oils and also showcases another way we can cook and consume rice. So, let’s start cooking.

INGREDIENTS
Rice
Coconut milk
Green fresh pepper ( chopped )
Onions ( chopped )
Shrimps ( washed & dressed )
Salt
Seasoning cubes.
Peas / runner beans
Carrots

Method
Grate or blend coconut, pour boiled water ,leave to stand and cool .Then sieve to get out the juice.
Boil rice with very little water. Once the first water is dried .Put some of the coconut milk in small portions and continue to cook. The coconut milk should be divided into 2 parts.

In other pot, pour in the other portion of the coconut milk and leave to boil until liquid is reduced .

Add the chopped onions, green pepper and the shrimps leave to cook for 3minutes.

Add the seasoning cubes, salt peas and the carrots. Leave to cook for 2 minutes

Pour the coconut milk content into the rice pot stir and leave to cook until the rice is dry.

Serve with your choice of protein .
Voila food is ready .
