GROUNDNUT MILK AND COOKIES
You need
- Groundnut
- Water
- Sugar/honey (optional)
Preparation
- Soak the groundnut in hot water for about 2 hours.
- Peel the skin.
Method
- Soak the peeled groundnut for 3 hours or overnight in clean water.
- Once the time has elapsed, blend.
- If it’s a blender used for a variety of things e.g pepper and other seeds, blend water in two sets to minimize interference of other tastes.
- Blend the groundnut with water covering it considerably.
- Once everything is well blended, sieve with a clean net-like piece of cloth or clean handkerchief into an enamel plate or pot
- Squeeze to be sure most of the liquid is out.
- Heat the milk up for 3 minutes. You can add water if needed.
- Leave to cool. Remove milk skin.
- Milk is ready. Serve sweetened or unsweetened.
Groundnut cookies.
As it is said that nothing is to be wasted in nature, the remains after extracting the milk were turned to cookies.
You need
- Oil
- One egg
- Sugar (2 tsp)
- Cinnamon (a tip of a table spoon)
- Butter for greasing the baking tray
- Baking soda
- The groundnut residue/ remains
Preparation
- Mix the groundnut residue, baking soda and cinnamon together.
- Grease the baking tray
- Break the egg
Method
- Mix the oil and sugar together till well combined.
- Add the egg. Mix some more
- Add the groundnut mixture. Mix till well combined.
- Due to the moisture in the groundnut residue, it would appear crumbly.
- Shape with you hands and lay on the baking tray.
- Place in the preset oven. Bake for about 30 mins or till brown.
- They go excellently with the milk.
