EGUSI AND GROUNDNUT SOUP
Egusi also known as melon seed is one of the items used in making soups in this part. It is an ingredient packed with a lot of nutrients. Today , the melon seed is going to be accompanied by groundnuts. So come with me as I highlight the things needed ,methods and all.
YOU NEED
• Egusi
• Groundnut
• Meat
• Fresh pepper
• Onions
• Dry/ smoked fish
• Palm oil
• Cow skin / leg ( optional)
• Seasoning cubes
• Salt
• Water /meat stock
• Crayfish
• Bitter leaf
PREPARATION
• Wash the meat and season as desired then cook to the desired texture.
• Wash the cowskin / leg , smoked fish and break into small bits.
• Blend the pepper & onions together, blend the groundnuts and melon seeds separately.
• The groundnuts must have been washed and skinned. This done by soaking it is hot water for a while.
• Blend the crayfish.
• Wash the bitter leaf.
METHOD
• Add the cowskin/leg & smoked fish into the meat pot. Leave to cook for about 15 minutes.
• Add the pepper and onions mixture to the pot ,cook for 5 minutes.
• Add the crayfish .
• Add the palm oil .cook for few minutes.
• Add the egusi and groundnut pastes. Leave to cook for 10 most minutes.
• Add the bitter leaf, seasoning cubes ,salt( if needed), meat stock / water .
Soup can be served with any choice swallow.
