MIXED VEGETABLES JOLLOF RICE



There has been a lot of talk on the jollof rice. In today’s post we are cooking something slightly different.
This a mixture of the normal jollof rice and some vegetables. We all know how important vegetables are for our nutrition.


YOU NEED
Rice
Meat / Chicken
Tomato paste
Carrots
Green pepper
Spring onions / runner beans
Seasoning cubes
Salt
Water
Pepper
Onions.

PREPARATION

Dice the carrots.
Chop the onions, fresh pepper, spring onions              and green pepper.
Cook the meat.

METHOD.

Stir fry the vegetables. In the order; onions,                peppers, spring onions and carrot.
Once done stir frying, remove the fried                        vegetables from the oil.
Fry more onions till translucent. Add tomato              paste to the frying onions and fry.
Add water as needed and seasoning cubes to             the tomato paste as it fries.
Add water enough for the rice to boil in. Leave           to boil.
Wash rice and add to the pot to boil. Add salt                 to taste.
Leave to boil.
Once rice is almost done, add boiled meat and          the stir fried vegetables. Leave to simmer for             2-  3 minutes.
Serve.
