MIXED VEGETABLES JOLLOF RICE
There has been a lot of talk on the jollof rice. In today’s post we are cooking something slightly different.
This a mixture of the normal jollof rice and some vegetables. We all know how important vegetables are for our nutrition.
YOU NEED
• Rice
• Meat / Chicken
• Tomato paste
• Carrots
• Green pepper
• Spring onions / runner beans
• Seasoning cubes
• Salt
• Water
• Pepper
• Onions.
PREPARATION
• Dice the carrots.
• Chop the onions, fresh pepper, spring onions and green pepper.
• Cook the meat.
METHOD.
• Stir fry the vegetables. In the order; onions, peppers, spring onions and carrot.
• Once done stir frying, remove the fried vegetables from the oil.
• Fry more onions till translucent. Add tomato paste to the frying onions and fry.
• Add water as needed and seasoning cubes to the tomato paste as it fries.
• Add water enough for the rice to boil in. Leave to boil.
• Wash rice and add to the pot to boil. Add salt to taste.
• Leave to boil.
• Once rice is almost done, add boiled meat and the stir fried vegetables. Leave to simmer for 2- 3 minutes.
• Serve.
