BANANA BREAD
If I was asked to list my five fave fruits, no doubt, bananas would be somewhere at the top of that list. Bananas are sweet to the taste, can be taking firm or soft, depending on your preference. They can’t just be consumed as fruits that they are but can be incorporated into other dishes/meals as I’m writing about today. YOU NEED
Butter 125g
Sugar 5 tsp
Eggs 2
Very ripe bananas 5 medium sized
All purpose four 1 cup
Baking soda 1 tsp
Salt a pinch
Vinegar 1 tbsp (optional
PREPARATION
Mash three of the bananas
Slice the remaining bananas into circles of moderate thickness
Sift flour and baking soda
Butter and flour (optional) a loaf pan/tin
METHOD
Cream butter and sugar until a pale yellow color is achieved.
In another bowl, mix the eggs with mashed banana.
Add the banana-egg mix to the butter-sugar mixture. Whisk to combine.
Add flour and baking soda to the previous mixture. Incorporate with a spatula or electric mixer.
Add vinegar and stir the flour completely. You should have a batter of moderate thickness, about dropping consistency.
Turn the batter in the prepared bowl, place the banana circles in desired order on top the batter.
Bake for about 20-25 minutes in a preset oven or when it passes the toothpick test.
Enjoy the sweet goodness with beverage or juice of your choice.
