NATIVE JOLLOF RICE
Rice is one of the staples eaten on a regular in Nigerian homes. It is important that it is prepared in a variety of ways. One of such ways is the recipe I have to present for today. This meal is enriched with a lot of nutrients because of the other ingredients used in preparation.
YOU NEED
Rice
Meat
Smoked /dry fish
Fresh tomatoes and pepper
Onions
Smoked prawn [optional ]
Green vegetable
Crayfish
Palm oil
Seasoning cubes and Salt
Water
PREPARATION
Cook the meat to your desired taste/texture.
Chop the tomatoes, pepper and onions
Pluck the vegetable, wash and shred.
Wash and break the fish into small pieces.
Remove the head of the prawn and wash. The head can be blended with crayfish for subsequent use.
Blend the crayfish.
Method
Parboil the rice.
Pour palm oil in to another pot ,leave to heat for a few minutes.
Add the chopped onions, tomatoes and pepper. Leave to fry for about 10 minutes.
Add the meat, smoked fish, prawn and the crayfish. Leave to cook for 5 minutes.
Add the seasoning cubes and the parboiled rice ,also add water if needed then stir very well.Leave to cook for a while.
Add the vegetable . Leave to cook for 3minutes.
Food is ready, this meal is better eaten warm because of the palm oil used.
