SOYA BEANS AND GROUNDNUT SOUP
As a Nigerian, it is needless to say how much swallow is a staple on our dinning tables. And, swallow is always accompanied with soup. We have a wide variety of soups with different ones being from different tribes. Today, I bring to you, this pocket friendly soup packed full with essential nutrients. The main ingredients of this soup include soyabeans and groundnut.
YOU NEED
Soya beans flour
Groundnut paste
Smoked fish
Palm oil
Fresh pepper
Fresh tomatoes
Seasoning cubes
Salt
Water
Pumpkin vegetable { ugu }
Onions
Crayfish
PREPARATION
Mill the soyabeans ,crayfish and groundnut dry separately. This is when you must have roasted the groundnut.
Blend the fresh tomatoes, pepper and onions together.
Wash and shred your vegetables.
Wash your smoked fish.
METHOD
Mix half the soyabeans flour with same proportion of the groundnut paste.
Add some ground onions,pepper and tomatoes to the groundnut and soyabeans mixture.
Mould into balls.
Boil some water in a pot, gently drop the moulded balls into the boiling water.
Cook for 10 minutes/
Heat the palm oil in another pot,add the remaining tomatoes paste.leave to cook for some time {10 minutes}.
Add water if need, smoked fish, the remaining soyabeans flour and groundnut paste. Stir gently.
Add your crayfish, seasoning cubes and the cooked balls.
Add the shredded vegetables,salt to taste and stir.
Leave to cook for few minutes .
Serve with any swallow of your choice.
