MEAT SAUCE


  I like yams!! When yams are season, I most definitely love to eat as many sweet tasting ones as I can before they go right out of season. On some days when I don’t particularly want to eat yams the regular way, that is, with oil, stew, as porridge or even fried, this recipe below is one of my fall backs. Looking to try something finger-licking-good with your yams this weekend? Don’t worry, I’ve got you. This recipe is an all-rounder, even if I say so myself. Vitamins, Carbohydrates, Protein, Fats and oil, you name it, are very well represented within this meal.




YOU NEED

Carrot

Sausage

Sweet corn

Baked beans

Onions

Runner beans

Dry pepper

Eggs

Seasoning cubes

Salt

Vegetable oil


PREPARATION

Puree the sausage using a food processor or blender.

Wash and dice the carrot and the runner beans.

Slice the onions.

Break the eggs into a bowl , add salt and whisk.


METHOD

Pour the vegetable oil into a pan. Leave to heat up.

Add the onions. Leave to fry for a few minutes.

Add the sausage. Leave to fry.

Add the carrot and the runner beans.

Add the dry pepper and the seasoning cube[s]. Leave to fry for a few minutes.

Pour in the sweet corn and baked beans ,stir and leave to cook for a few minutes.

Add the whisked eggs , leave to set and stir.


Voila ,food is ready.
Serve with boiled yam.
