When the rains come, there is an abundance of both vegetables and sea foods. Many are used to smoked prawns/shrimps (crayfish) but even fewer may be used to the fresh ones. Today’s recipe explores a quick way to use fresh prawns. Hint: it is paired gloriously with pasta and some other vegetables.
You need
- Pasta
- Carrot diced
- Green pepper chopped
- Seasoning a cube
- Ground pepper 1 tsp
- Vegetable oil half a cooking spoon
- Curry 1 tsp and half
- Garlic,onions chopped
- Shrimps clean out, marinade with ground pepper and salt
- Salt to taste
Method
- Parboil and drain the macaroni. Set aside.
- In a sauce pan or small pot, heat up half a cooking spoon of vegetable oil.
- Fry onions and garlic until fragrant.
- Add chopped onions to the pan. Stir-fry for another minute.
- Add seasoning cube(s) and curry powder. Stirring as you add.
- Once combined, add the marinated shrimps into the pan and fry for about 2 more minutes.
- Finally, add the carrot, stirring as you go. Don’t stirfry for too long after the addition of the carrots so they remain crunchy.
- Add the drain macaroni into the stir-fry ( or the other way around, as you please).
- Serve warm.
