BITTERLEAF STEW
Bitter leaf is one of the vegetables used in cooking in this part and it is also very medicinal. This stew is nutritious because of the other ingredients the stew is made with. So lets start off.
INGREDIENTS
• Fresh tomatoes & pepper. ( washed and blended)
• Onions. (Blended )
• Chicken / snails ( cooked )
• Smoked fish ( washed and deboned)
• Stockfish. (cooked )
• Iru ( washed )
• Crayfish. ( blended. )
• Seasoning cubes
• Salt. ( to taste )
• Palm oil
• Bitter leaf. ( washed or boiled )
METHOD
• Heat your pot and put the oil , leave to fry for 5 minutes.
• Pour in the tomatoes, pepper and onions mixture. Leave to fry for 10 minutes.
• Add the chicken, smoked fish & the stockfish. Cook for.10 – 15 minutes.
• Add the bitterleaf, crayfish ,iru and seasoning cubes. Cook for about 10 minutes.
Stew is ready and can be served with choice swallow.
