CABBAGE STEW
Hey food lovers!! It’s our first ever blog post and you are most welcome. With Christmas in a couple of days times, I am sure many of you are already wondering what delicacy you’d have to serve yourself and loved ones. Well, wonder no more as I have got a solution for you and, it’s not the usual meals of rice that have come to characterize Christmas celebrations down here.
Today, I bring to you CABBAGE STEW, a “riceless”, rich and budget friendly alternative for a Christmas family meal. Cabbage is a very common and easy to get vegetable here in Nigeria and I believe in most places around the world and it sure has numerous benefits. It is packed with vitamin C, boosting immunity and is a potent anti-oxidant. Cabbage aids digestion, relieves constipation and aids bowel movement due to its fibre- rich nature. It also provides the body with vitamin K which is critical for blood clotting (speeding up healing of wounds).
Cabbage could help lower cholesterol levels and keep a check on the blood pressure. It is also good for weight loss as it is packed with beneficial vitamins, minerals (like calcium,magnesium etc) and other nutrients and is quite filling due to its high fibre levels. These are some of the many benefits of cabbage. With the richness of cabbage, I guess one can say a serving of cabbage a day could keep he doctor away.
Cabbage stew Recipe
You Need
Fresh tomatoes
Fresh pepper
Meat [ chicken/beef etc ]
Cabbage
Seasoning cube
Vegetable oil
Curry
Onions
Salt
Garlic & Ginger [ optional ]
Preparation
Blend the pepper, tomatoes,onions , garlic and ginger.
Boil the meat.
Cabbage: Remove some outer part (part with hole or withering in some way), wash in salted water, pat dry and shred
Slice the onions
Method
Put the pot on the burner to dry .
Pour the vegetable oil into the pot. Leave to heat for a while.
Put in the sliced onions , allow to fry until it’s fragrant or to your taste.
Pour the blended tomatoes mixture in to the pot and leave to cook for about 10 minutes or when the tomatoes have a thick consistency.
Add the shredded cabbage to the sauce.
Add the meat, seasoning cube and curry to the sauce.
Leave to cook for a few minutes make sure you don’t over cook the cabbage.
Viola, food is ready served with boiled yam / plantain.
PS: In the event of leftovers, it should be refrigerated and heated up the following day. As it is a vegetable, it is best consumed when freshly made. Continuous warming could lead to loss of the rich nutrients contained in the cabbage.
