PLANTAIN OMELETTE

 

   Plantains are a staple meal down here in Nigeria. From the fried version served with sauce or beans to varying other recipes that involve boiling or grilling the sweet fruit.
   Plantain, like it's sibling, the banana, is a very good source of potassium. The electrolyte that is in potassium keeps the blood pressure in check, it does so by negating the ill-effects of sodium. And this goes a long way in enhancing muscular and digestive functions. Plantain also contains Vitamin B6, improving brain power. Amongst many other nutritional values, plantain contains elements that help reduce unhealthy cholesterol levels. 
   Eggs on the other hand are a useful source of Vitamin D which helps to protect bones, preventing osteoporosis and rickets. They are filling and when enjoyed for breakfast may help with weight management, as the high protein content helps us to feel fuller for longer.

   One thing with Nigerian food is the presence of starch in most of our staple meals. Today's recipe proffers a good blend of protein, carbohydrates and vitamins and minerals, packed in one meal.
 




YOU NEED

Ripe plantain

Eggs

Runner beans

Fresh tomatoes

Onions

Sausage/minced meat /flaked fish / corned beef

Spinach

Salt

Dry peeper

Vegetable oil


PREPARATION

Dice plantain into some bits.

Slice onions and fresh tomatoes.

Cook the meat/fish and mash /flake.

Shred your spinach and cut the runner beans.

Break the eggs into a bowl ,add salt and dry pepper then whisk.


Method
Put your pan on fire ,allow to dry out.

Pour the required quantity of vegetable oil.

Put all the items prepared into the whisked eggs. Whisk again.

Fry.



Serve with boiled yams or bread.
